I sort of stumbled over your LONG journey Tuesday night, and ended up spending most of the time between midnight and 4 AM following the progress of your project. Simply got stuck - while I badly needed to go to sleep...
In close to 1,500 posts, everything has already been said, but for me (although I so far only skimmed through some of the videos) this is inspirational, educational, sisu (look that up, it's Finnish), gutsy, and "crazy". Amazing that you endured and manage to have the energy to crank out such a nice end result.
Upon seeing the damage you discovered, I would have called it quits, parted the boat out, cut up the hull and paid the fee to lay it to rest in the local landfill (sad, but that's where they eventually end up), and bought something "different" (or picked up an engine-less hull).
Your journey should also be an alarm bell for everyone that is looking to buy a used boat with a carpeted interior (I have one...).
Personally, nowadays I try to always park on an incline (water drains), stern facing the south (sun for added heating), and provide ventilation under the tarps during the winter months. I'm also allergic to bow riders with so much interior "exposed" to the weather , but understand their "utility" for many in a sunnier climate, and on inland lakes.
Back in (native) Sweden, very few boats had the issues that are so common in the runabouts here in the US. Carpet on plywood, and limited or no "lay up" for the winter. When I grew up over "over there", boating was much more of a very dedicated hobby, than a "past time", and if you had a boat, working on it was half the joy. That was at least until American runabouts started showing up "en mass".
All that said, enjoy the boat and the heat. I used to live in Dallas (north) and endured 60 consecutive days once when the day temp passed 100F. I wonder if you are not going to be very close to that this year. Up here, PNW, summer just started (very late) and we're hardly a week into it - with boat still on the trailer since last year (been working on the house so really no spare time for the boat yet)...
