Posted this pic in the Superbowl thread.

Venison or ground beef depending on what we have. We cook up about 3 to 4 pounds of meat, add about 10 or so ingredients. Let it cook/simmer for about 2.5 to 3 hours. Then make the Nachos with onions, peppers, pepperoncino's, tomatoes, jalapeno slices, cheese and about 1 1/4 pounds of the meat. Bake then broil.

My Sunday sauce. The official name of the dish (wife even told everyone on her staff call this week) is Joe Balls. Her three sisters love my balls; they describe them as succulent.

I know yall tired of my pizza pics but...

My fist breadsticks. Trying to match Pizza Hut sticks, got about 75% there. I think I know how to nail it for this weekend. This was a second batch - I often take lunch to the dude at the booze store.

For those of you that use wood chips or chunks in your smokers, I stumbled across a great place to buy some specialty barrel chunks. I am in no way affiliated with these guys, I just REALLY like their products.

I've tried several of their chunks in our smoker, and I have to say the apple brandy barrel is my fave. Although the tequila barrel for chicken is very tasty too. The chunks are always fresh. You can identify them by smell. They are very powerful.

Double smoked spiral ham, cherry smoke with honey and brown sugar between the spirals Sliced potatoes, grilled with butter and fresh garlic. Cinnamon, nutmeg and butter baby carrots. Our Easter dinner out on the patio. It was a beautiful day, 75 degrees and a nice breeze.

crappy pic but easy as hell to make naan. One part self rising flour, one part greek yogurt. I use a cup and it makes two large pieces. Since we don't eat often enough to buy a pack from the store, this is better. And it is better...

Mix and knead in more flour until you can roll out without sticking (minute or so) and spray a hot skillet with Pam, cook.

So easy and as naan should be great for sopping. I added fresh garlic to the dough on this one, usually have a coffee cup of garlic butter ready counter to melt and brush on.

If you want something quick and easy as a treat, get some Shake It Pup seasonings, i have about 5 different flavors, and every few days shake it onto the boys food.

missed this. We actually make our own 'cookies' for the boys. Any veggies they can handle, some sort of grease, leftover fat or chicken skin all goes into the freezer then when the time comes I mix well, I have some squash from a couple years ago I canned, flour and make a dough and bake.

Should be doing some this weekend, i'll see what it looks like and post up.

my new 'specialty' is a pizza pot pie. Line the non stick strayed bowl heavily with slices of cheese (havarti, provalone and gouda is the mix I use), fill with sauce and your fillings of choice, top over the edge with pizza dough, bake at 425-450 for about 15-20 minutes until you smell the dough as cooked. Pull from oven, let sit for a few minutes, then flip. If you don't know how to flip with a plate on top, google it. It is to appear as a stuffed mushroom when complete.

My bowls are restaurant style and tho the top is very wide, it tapers down to a small base. Turns out they are a perfect one cup bowl which never having been in the business make sense for portion prep/control. I use about 3/4 cup sauce and 1/4 cup filling - this was rough chopped mushrooms.



Pre-flip (note i rolled one lid too small) and forgot to add you need to non stick spray the outer side of the bow as well.

Then when flipped you take a fork, make sure lid is not sticking to it, then with the fork gently lift bowl off. I topped with some dried oregano and fresh basil. Remember, this is only one cup of fillings but looks like so much more.

link sausage is what I grew up on, didn't know about patty sausage until I was about 15 when I moved to MO. We always had it on our boating/camping trips. Always slow cooked for too long until they get a bit sticky on the outside. I rediscovered them a couple years ago and now don't eat much f the patty ones.
