I can buy st louis ribs for $6.99 lb or I can buy a whole rack and break it down myself and pay only $2.99 lb. Then I get to make snacky snacks along the way to rib wonderfullness

then since we sent all the leftovers home with the kids, I threw a 3 lb brisket on the remaining coals and this is 7 hours later this morning. Going to pair it with a fat slice of seeded rye toast, lots of butter and two eggs that were in a chicken on thursday.

Three hours cooked at 250, seasoned and wrapped in foil on the grill. Pulled off and started the half baked potatoes. Ribs back on with bbq sauce for finishing.
ricotta, fresh mozz, pecarino and parm with asparagus and red onion. I also had forgotton to put in myy pizza pan so i let thissit on the counter about 15 minutes while that came to temp and the dough did a bit more rising on the edges - really good.
