I found the answer. I called the dealer and after talking to two different techs I was told that there are 5 presets for trim assist and apparently all 5 need to be set in order to be able to enable trim assist. The video posted above does show setting all 5 but never says that all 5 are required.

Seems logical. I'll give it a decent push (handle goes away to tighten) when done the initial drop and then power out to get the boat into position.
