we grow pineapples in our sunroom, takes three years but dam they are good. There's enough other sweet in the cake - just eat yours fresh cut with the love of your life.Quit frankly I'm more interested in the pineapple upside down cake, haven't had one in forever. Maybe that's what I'll do with this one when it's ripe

It sure ain't hard. Bad thing is I could eat the whole thing so I give at least half to the neighbors. Good news is the standard recipe calls for three eggs so easily divisible to make three smaller batches. I picked up some cast iron the other day and I'm going to try out the one on the left. The flip will be challenging.I’m still thinking about the Pineapple upside down cake. My grandmother used to make them all the time then my mother took over but it’s been close to 40 years now since I had a taste. Maybe it’s time to for me to get baking.
