I thought it should have plenty of weight capacity for us, But jims123 says that we’ll be over weight. I’m new to learning about boats, so is there something obvious that I am missing?

You can mandate that the wife stay where you tell her. Little kids often want to move around. Dogs have a mind of their own. You have a narrow flat bottom boat. It will be movement sensitive. You have shallow freeboard. On top of that your bimini is going to act like a sail and give you even less stability.
Add up all the weights and see how close you come. Weight might be yet another concern.
You can also tell from the color of the spark, blue is hot but yellow is weak !! Not as good as testing the gap but if you have a yellow spark it can be a sign of it being weak...Well----When folks say that they have " good spark " it means very little.-----A good magneto will produce up to 28,000 volts.----That will jump a gap of 5/16" with a snap you can hear.----Does your jump a gap of 5/16" , yes or no ?
Your passengers will need to understand they cant always sit where they want to, sometimes they need to sit where the boat will be balanced properly ! As the captain, your job is to figure where each one sits to get the safest operation even though your passengers may not like where you put them !!That’s is something I’ve never even considered. its all covered in the factory service manualLots of great information on this sight for sure! Other than the service manual is there any place with a "checklist" of things to check out on for my motor. Like everything that I need to look at to make sure it is 100% good to go.
Two adults a baby and two dogs is overweight ?? Not on a 16' jon boat, probably has a 1000 lb capacity. I have a 2.2 hp Merc as a kicker on my 16 Sylvan side console, works great for trolling then a remote electric on the front, can steer by pushing a button..You don't need a kicker, you need a bigger boat. Your Jon isn't safe with that many occupants.

When you take a friend along with you and you have an engine problem, you will have two " horsepower" to get you back. LOL...That's probably a reasonable place to start. I do have both oars and an electric trolley motor
