Can't help you on the motor or controls, but here's my 2cents on the interior restoration.
First - open a photobucket account - so you can post the pics directly into your thread - you'll get better responses that way. Simply upload your photos, click on the IMG link, then paste into the text here. Much easier for readers.
I see you have already started the teardown - looks good inside.
Before you begin rebuilding, read through some of the starcraft restoration threads, so you can get an idea about what you are getting yourself into. Once you've read two or three, you'll get the general idea of what you are looking at having to do.
If you are simply looking at replacing the floor and transom (given the condition of the floor, the transom is almost certainly shot):
If budget is an issue, use exterior grade plywood - NOT pressure treated, as that will corrode aluminum. It's cheap, and glued together with waterproof glue. Save the boards you have taken out so you can use them as a template for the new. Seal the exterior grade plywood with spar varnish (epoxy is better, but spar varnish should stand up well, and it is also UV resistant, so you won't need to coat it with anything to get some use out of it). Then put them back in with rivets or stainless steel screws.
In terms of getting seats and stuff - you could always build something out of exterior ply - but you may be better off checking out the seats available here on iboats (they are reasonably priced), or alternatively going to ebay to try and find something.
