question about 2 part foam

Just a simple question,
Can you trim off the excess foam or does that open the cell and expose them to water penetration

you can trim it. surface absorption will be minimal.

closed cell foam is like micro ping-pong balls . . . open cell foam is like micro whiffle balls.

You can paint or epoxy over the cuts to make them a little more water repellant if you like, it smoothes the surface back out.
