If wondering, I love kayaking on the lake at sunrise and being with beavers and the cranes during the morning cool mist. Definitely priceless moments in my life.
Before buying a kayak, here's a few tips that might help.
10 feet long for small ladies and kids.
12 feet long for normal size adults
Might go 14ft if loaded down with fishing and other gear. My 14.5T Winderness 2 x seater configured in single seat setup is very stable in the water. Especially at sitting and lower travel speeds.
For fishing, the skirt isn't needed.
Dry well (for keys, wallet, cell phone) is mandatory on all kayaks.
Don't need a sea kayak for open lakes.
Lake kayaks can be used on sea shorelines
Don't need expense kayaks. The one shown in your above URL (at $2,400) seems way over priced to me. For my 2 seater @ 14.5 ft long kayak with rudder, think we paid $1,000 for it. Next time around, I'd buy used - to get even more savings.
Kayaks are awkward when lifting above a car or pickup roof. Especially in the wind. For safety, it takes 2 x people to lift a kayak on the vehicle roof. If on vehicle roof transporting is often done, I would recommend a little trailer (for the kayak). It only takes 1 bad slip to take out one's back. re: Been there, done that and will never put a kayak on a roof by myself again. Never.
Since majority of time will be fishing (less ground speed) in your kayak, I'd buy a lower cost PVC Kayak. Wilderness System brand (which we have) is good. A rudder is nice on the longer 14+ kayaks but isn't mandatory. A good open cockpit model to investigate is: Commander 140 @

Here's the bonus. Buy a kayak design that can be fitted with mini pontoons down each side. Any welding shop can make them for you. Or, they can also be store bought (re: love online internet shopping). For fishing, these side pontoons steady the boat. IMO, they should be standard build for all fishing kayaks. And if attached properly, one can also attach a 12V electric motor to it. For example:

If wondering, I sometimes attach our 36 lbs Minkota electric motor to my 15.5 ft canoe and its amazing. Silent power and when entering shallow waters, I simply lift (tilt) its motor out of the water. If wondering, I also took the factory high rear seat out of our canoe and installed a plastic fishing seat. re:

IMO, all canoe seats should be lower (for more stability). But, that's a topic for a different post. If kayak boat won't take a few modifications, then perhaps a used Canoe with a few minor mods (like plastic seat, Plastic Battery box and electric motor on mounting bracket) will be better? It would certainly lower the cost with lots of onboard storage room - compared to using expensive small cockpit kayak design.
