Breakfast Dishes and Biscuits

My uncle makes a mean breakfast caserole during family vacation with bread, eggs, and whatever after that - mostly either sausage or with diced onions/peppers/etc.

Can google up some recipes and get close. He makes it, I eat it. Works for both of us :)

Well, same amount of it raising. Maybe I should try 2 or 3 tablespoons of baking power. I have tried 1 1/2 and about the same. I'm using Crisco at 425

Well I'm out of ideas. We don't keep crisco around due to health issues but it sure does a nice job frying chicken, I miss that..

I like it and have had it myself many times. Here I am a bit over weight BMI of 28, and love pizza but try real hard to stay away from. Just eat to much when it's around

Read up some more on Biscuit making, and could be I'm using cheap flour. Some of the cheap flour has to much protein in it which can cause issues with rising.

Shorting and Lard are good because unlike butter it doesn't need to be cold and doesn't soak into the flour like butter does when it warms up. This si why they want you to freeze the butter and chop in small cubes or shread like cheese

Tomorrow I plan a different approach, going to use self rising flour (Got Lilly White), so no extra salt except of what's in the butter (yes, going to freeze) and Butter milk. Just 3 ingredients, hope this works

A smoked breakfast fatty is killer. But not something you do very often. Basically eggs, cheese, some peppers, onion, hash browns, rolled up in sausage and wrapped in bacon then smoked.

Never heard of it, but I'd sure give it a try!

A traditional thing around here is what we call toutons. Just let white bread dough rise and then stretch it out into flat round circles sort of like very thick pancakes, and then fry them until browned up. Serve with molasses over them. Simple but good.

I've never made biscuits. I love biscuits and gravy, but shouldn't eat is too much ... so it's an occasional treat when I'm traveling.

For breakfast, I'm typically playing around with different variations on the omelette. Mostly like trying different sausages (local store here in town does a great country sausage), cheese, hash browns, and different veggies.

When I was a kid we used to make sandwiches with an english muffin, egg, cheese and Canadian bacon.

I do like country steak and biscuit from a couple of the local joints here in town.

We LOVE breakfast fattys. Made one last weekend when we had company at the cabin. A little too much for the wife and I when it's just us, although leftovers are great.

My favorite biscuits come from a tube with the Pillsbury name on it, never tough, taste great, easy to make !! Not gonna try to fix what ain't broke !! ...lol...
While lots of this stuff sounds great, those of us with big long scars on our chests have to pass on the fatty stuff....
