I went with a full 6' Sunbrella enclosure. It has definitely added more versatility to our boating. I usually don't drive with the windows up but I love being able to zip them in place when needed. There is a bit of distortion but it's not that bad.
I have no experience with Sharkskin, but I'm happy with how easy the Sunbrella material is to clean and the way water beads and rolls right off.
