A galley isn't anything but kitchen wall, base cabinets and appliances. If its ripped out your design can be anything that is functional.

Have you considered using 1/2” pink foam board insulation to mock up what you may want? This way you can get a look at what’s possible and get an idea of the dimensions your looking at. Built my home bar this way. Worked great. Just a though.
