I have an old alluminum boat paired with a 1977 johnson 6hp, and was just wondering if anyone has any ideas on some fishing type upgrades or upgrades in general that they think would work well. I have pictures attached below

The splashwell and dash say the boat had a helm

Agree with grub, go back to a helm and upgrade from 6hp to 25-40 (or what ever the capacity tag states)

Other than that, a full cooler of beer and a full bucket of bait

Aluminium Hull, and a Glass Cap.

As mention above, and more HP. It really isn't big enough to be putting anything that allows for Fishing while standing, unless of course you want to go swinging too. Seats, but that may require a Floor being added

If you are in a 300 acre lake leave it be. If traveling any distance, the helm will move you forward and more HP will make it a different boat. My nearest engine to yours was a 1956 Johnson 5.5 and it moved the boat but that's about all. Wouldn't plane even with lots of gear/fuel tank moved forward.
