There was a guy on these thread not too long ago that made a very nice custom mount for his boat. I can't remember his thread title, but look for it and see how he accomplished such a build. It looked very very nice and would work for your setup as well. JMHO
Use a seat pedestal, you may have to add a more rectangular piece to the top for the motor to mount to. Using the adjustable height model you can pull the pin and take the motor inside so a neighborhood Jawa doesn't run off with it.
