Steering is offset

Can anyone tell me the proper way to center the steering wheel. I have a 2001 Monterey Edge 180.

What do you mean center? Is the wheel tilted when the engine is amidship and you want some bar on it to be parallel with the boat or if sloping bars on each side, at least equal height? If so, when you think it is crooked, are you trimmed out where you normally run and is the water calm with no currents or cross winds? Is your boat trimmed laterally such that boat sits level at this time?

While you are answering this, what type of wheel do you have.....cheap plastic, large diameter spoked SS.....something else?

How about steering? Rotary (round drum type thing behind dash on end of steering shaft0, perpendicular rectangular "rack" with steering cable exiting one end.

What type engine installation, I/O, OB?

If there is one? Is the trim tab anode centerd under the cavitation plate
