Rewiring 1989 Bass Tracker

I'm finally taking the time to rewire my 1989 1800 FS Bass Tracker. Its currently a crazy mess and many of the wires are ghetto rigged and straight scary. I was wondering if anyone had any suggestions on the type of wire gauge I should use for my accessories, what type of positive and negative bank system I should use, where I can find cheap panel breakers, and any other suggestions from people who have done this before. My current system is a dual battery system; one for my trolling motor and the other for everything else. I want to get another battery so I can have a starter, accessories, and trolling motor batteries. I also have two control panels one in the bow and the other in the cockpit I would like to replace both of these. Any help would be greatly appericated. Thanks
