New trailer, different bunk measurements

I'm replacing my old '89 eagle for a newer beefier '04 eagle. The bunk setup for the 2 are similar but not exact. I was hoping to get some extra set of eyes on my plan, or fresh ideas before I head down this road.
Hopefully my drawing illustrates what I have going on. My thought was to cut down ourside of the stern bunk support on the new trailer to match the angle of the old, and shim up the inside of the middle and bow bunks to match the angle.
The distance between the bunks on the newer trailer are a tad wider than the old, but I have already verified that won't interfere with the strakes.

Kind of hard to follow the photo, but..

Are these welded in place bunk supports?

Any possibility that you could bolt a swiveling bunk bracket to them, so they conform to the hull shape?
Will save you from having to get the angles and heights just perfect, and will give you some adjustability.

There is a lot going on in that drawing, I have a hard to keeping it all straight myself. I actually came back on to see if I could delete the post.

The brackets and supports are welded to the frame. I'd prefer to keep it that way. I have to change the angles and the heights. Spent most of the day planning out the cuts and trying to recall highschool trigonometry (just kidding, I googled that part).
I haven't done much welding or metal work, so I guess I thought I had one shot at getting it right, and overly concerned about getting it perfect. But my neighbor who is a welder by trade (and of course welding this for me) talked me off the ledge.
If this blows up in my face I know I can fall back on those brackets. I'll admit they concern me a bit in that it looks as though they could slide if I were to head down a rough road or pothole or such.
Right now I think I have a good plan going forward. Thanks for the reply.

Finally switched horses... ended up changing the lateral ange the angle of the bunks by 6*, 7* and 9*, changing the height of the bow and stern brackets - considering that changing the angle also changes the height, and also changed the pitch - bow to stern. Ended up being a bit of a head scratcher, but got it done and couldn't be happier! It tows so much better and it's nice to have the brakes.
