I have a 1990 Carver with twin 4.3l Mercruisers and I put a Faria fuel manager on one of the engines, because one uses twice as the other as I've mentioned in another thread.
I have only been monitoring it a couple of times, and it shows me to be using 20ish GPH. I always run at about 2500 RPM. Could this be true....it doesn't to me because I have two 50 gallon tanks and run for about 3 hours and only use roughly half a tank.
By the Faria I would have run out of gas in 2 hours.

Any one else use one of these?

I would say you have problems with your Faria fuel manager. Did you calibrate it when you first installed it.
I couldn't imagine a 4.3 using that kind of fuel, and not have some noticeable issues.
I'm going to move this over to the Electronics forum, since the same unit can be used on outboards or any other engine.

You couldn't "pour" that much fuel through that engine in an hour -- especially at that speed. You are either misinterpreting what the flow monitor is telling you, it is a defective unit, miscalibrated as Don said, installed incorrectly, or if the engine has a return line to the tank, that would account for the excess flow since that excess fuel is bypassing the engine and being returned to the fuel tank.
