Actually, black can be reflective too under the right circumstances; especially if the surface is smooth and angular. You're right though, flat black would look fine on your mostly curved dash. I personally would go with a dark gray, or if you want to spice it up a little bit, choose a shade that complements your boats interior or paint job colors with the flat or matte version of it. For example, my Sundancer is trimmed in three colors, maroon, burgundy and wine red. The helm is upholstered in burgundy vinyl, and the dash is maroon. That is from the factory. Non-reflective, and complements the seating. Let's see some pic's of your vessel!
