IDK if thats the real name of a sail, or if something they made up on the puddle duck site, but how do I cut it so that the sail has a foil shape?

Your not going to put shape into a sail unless you do a LOT of design work and figure out how to cut the pannels so they make a foil shape and sew it toghter
