yeah JC my wife gets a little nervous about thawed meat. well all the womenfolk on her side are that way come to think of it... but i bet if you asked the same question of all the deer hunters - they'd say a week to 10days on ice in a cooler only makes it more tender

I'm with you on this one Ken. There is nothing like a good steak that has been hung on the bone for for a few weeks, and just grilled.

I often marinade mine for 4 or 5 days... well, I try but sometimes I get 'weak' and eat 'em up early. Can't help it
