If you wanna grow your own peppers, you can influence how hot or mild they are with how much water you give them. As the peppers develop and mature, less water makes them hotter, and more water makes them milder.<br /><br />They grow lots of peppers in the southwest, where the soil is alkaline, but I've seen them grown in Nashville, Tennessee where the soil is far more acidic. I don't know how much the soil type actually influences the peppers, but the hottest jalapeno I ever ate was grown in Tennessee and picked fresh off the bush. Good lord, I was rolling and flopping around on the ground, blinded with agony, with a garden hose running in my mouth for about ten minutes after that little stunt. And I grew up on the Rio Grande, eating Mexican food for breakfast! <br /><br /><br />-dd-
