snapperbait- i'm with you. i cook my fish & wild game and that's it! and not that often. :confused: mostly grillman, am i...we need to get properly educated... only MM talked about the normal country household stuff- crisco. i should be ashamed to say i just sprinkle on alittle of everthing i find in the cupboard(not under the sink)! but we got some killer ideas here! hehehe<br /><br />I've never eaten anything better than dawntime crappie fillets fresh the day before steeped in frig in 2 washings of cold water, rolled in cornmeal, sprinkled in pepper, and slow fried in a touch of butter.<br />you gotta have homemade biscuits, ez-over eggs & grits, and be looking out the window at wide-open woodland for it to take full effect though ;)

Pat filets dry. Dip in egg and cayenne pepper solution. Roll in Progresso's Italian seasoned bread crumbs. Fry in Olive oil.<br /><br />Use the excess egg and crumbs to make onion rings.

Here's one that is easy and good. Dip, marinate for stronger tasting fish, in italian dressing or any other type oily dressing (greek vinagrette etc.) Then roll in corn meal. Fry in hot oil till crispy. Doesn't get much better. Works better to cut the fillets into 1 inch wide strips.

I like to get a few bottles of mustard, roll the fillets in it, and then let the excess drip off...then dredge the fish in any type of breading. deep fry it, or cook however. The mustard really adds to the taste. Just wear rubber gloves, it stains your hands!<br /><br />Shawn

grandx got it. mustard first then 1/2 cornmeal 1/2 flour and a lot of Tony Chachere's seasoning,800-551-9066. peanut oil last longer and takes the heat better.

We used the following batter recipe for our diet needs. I got it online on a Diabetic website. Its light and pretty good for a low fat, low sodium, etc..

--2 cups of crushed corn flakes

--1 teaspoon each of 3 of your favorite seasonings: (or to taste)

Mine vary depending on my spice choices or tastes. Pepper, salt, paprika, garlic powder, onion powder, cajun, too many to name. Mrs. Dash has no sodium of course!!

--2 egg whites beaten

Dip prepared fish in eggwhite then cornflakes, then to skillet/oven.


We also love using Mcormick Cajun Fish Fry batter in the box. Tastes better pan/deep fried though!!

I like a beer batter recipe I found on the net a long time ago. Simple and tasty. Tried it on everything from fish to shrimp to onions. This went well with crappie and walleye.

The batter:
1 1/2 cups sifted flour
1 12 oz can/bottle of beer (Becks has been my favorite, but it's a matter of choice)
1/2 tsp salt
1 tsp paprika

1. Mix and whisk all dry ingredients together. Then add beer. Use a whisk to get out the lumps and whisk until light and frothy.
2. Wash the fish and pat dry.
3. Put one cup of flour on a cookie sheet or a large bowl
4. Dredge the fish in the flour and let excess flour fall back into the bowl/pan.
5. Dip the fish that was dredged in flour in the batter.
6. Cook in a pan/pot with at least two inches of oil that has reached 375 degrees until browned. Brown on both sides.

I love it when an old thread finds new life. I can't wait to try some of these. I'll be fishing for perch tomorrow and salmon/trout on Sunday, both on Lake Michigan. Let's hope I can bring home a lot! :)

Not sure if this seasoning is available everywhere, but, Nature's Blend is an awesome seasoning. You can mix it with cornmeal, flour, or just sprinkle it directly on the fish, then fry that bad boy in corn oil or for the gentleman who prefers crisco......use butter flavored. ;)

Cut fillets up into chunks, soak in milk overnight. In a ziplock bag mix corn meal, flour, creole, garlic salt, a tad bit of sugar, tad bit of butter seasoning, rub into meat chunks inside bag and cook in a wave oven (best way if you have one). Mmmm mmmm mmm, crispy on the outside, soft in the middle, best fish ive ever had!

I love when the old coating recipes come back. Our fish are always good but I can never get the coating crispy enough:mad:. But from reading the last two post I think the cornmeal will do it we are going out this weekend and hopefully get some stripers and add the cornmeal to it I bet that will do it:)....

Probly wasnt entirely the corn meal (although im sure it helps). A lot of it has to do with the wave oven. Great buy if you dont have one!

A wave oven takes care of that whole crispy outside thing, a great buy if you dont have one. Honestly the recepie was just an on the spot compilation that turned out good!

But if it will work I would love it Thanks for the reply I really love the crispy coating on my fish and any thing else that has a coating on it......

A wave oven is like a glass chamber that has a fan and heat coil at the top. It pushes air through the heat coil (like a blowdryer) and ventilates it back out through the top so the meat is getting a constant supply of fresh, hot air. Most come with meat racks at different heights just like a regular oven, but the difference between meat cooked on a regular oven versus a wave oven is night and day. Its good for all kinds of meat too.

Hey might have to pick one up checked it out on the web. I do have a regular barbaque and a infared cooker that is killer for pork butts and roast it said it was for turkeys works pretty good but with the pork is to die for. Thanks for the reply going out tomorrow hopefully bring back some stripers to cookup.......:)

i agree the egg and bread crumbs is simple and tasty. i find though if you add a little lemon pepper to the bread crumbs it adds a little extra tast that is not over powering but the light hint is enough to change it up and take the old bread crumbs to new hights.

My wife just throws in a lil instant potatoes to the drakes mix..... dips the filets and straight into the deep fryer....yum:)
