This is what I would do:

Coat each board with 2 coats of epoxy on the bottoms and 1 coat on the top hitting the edges each time http://i176.photobucket.com/albums/w200/ezmobee/New Boat/DSCF2370.jpg
Install the deck into the boat using rivets or deck screws http://i176.photobucket.com/albums/w200/ezmobee/New Boat/DSCF2386.jpg
Apply your next coat of epoxy with it all installed in the boat using the fiberglass products ondarvr recommended above.
I then used marine vinyl on mine which I am a fan of http://i176.photobucket.com/albums/w200/ezmobee/New Boat/DSCF2504.jpg but you would probably prefer a non-skid coating product of some kind.
