the choke is no different from a light bulb.....it works when energized by 12v.
and that should be a very momentary thing at start up.

if it is permanently fed 12v. back track from the solenoid to the B+ source and tell us what you find.

So when you got it, the Purple and White was on the Wrong Terminal(#6), and the Solenoid was super Hot? Yet when you moved the Purple/White down One Screw(#7), the Choke was always on? So was it Super Hot then?
No it doesn’t get super hot but the choke actually works when on screw 7

Oh yeah it goes to screw 7 in the pic I posted but it follows the sticker on the bar

B+ choke power MUST BE via the key CHOKE function for momentary activation at start up. wire it it up correctly and problem solved !!

There is a spring affair on the choke linkages.----A much mis-understood item.-----Maybe a previous owner was baffled by it and hooked it up wrong.----Remember we can not see , hear or feel your motor !

Maybe because the Chart shows it is supposed to be on #7.

However, Now you say the Choke works on #7, earlier you said it is always on when on #7. Maybe Power is being applied to the Circuit other than by the Choke Switch. Since you say it happens with 2 different Control Boxes, start looking between the Boxes and the Terminal Strip for Crossed Wires.

I opened up the controls and found that the wire that activates the choke (which should be purple and white is just purple) is also connected to the horn which is the accessory and should have constant power. There’s a purple and white wire that seems to do nothing and when I turn the key I get no continuity using a multimeter so I left that alone. I ended up taking the choke wire and hooking it up to the wire that activates the starter and now it only closes when I’m cranking. Don’t know if that’s what I should be doing tho

Can you push the key in on your control box?
As if it were a push button? Turn the key and push on it and see if you get power to the choke wire. Let us know if that doesn’t make sense and I’ll try again.
