I don't see any problem slabing on good wood either. All you need to do is make sure the new wood is attached and glassed properly.
Only thing I see you should be aware of is polyester resin shouldn't be put over epoxy. That's what the mfgs say and the reason is it won't bond well. Epoxy over poly is ok...poly over epoxy isn't.
