Absolutely. If you have it, use it. Fill up the voids and it will never sink.

Hmmm...good storage space for lifejackets? Or another battery if you decide later on for that.

just build a box out of plywood and line the inside of it with fiberglass, several layers. then fiberglass it into the floor and when finished gelcoat all of it making sure it is good and waterproof.

Yeah, build a box, glass it good. Or you can buy different size plastic boxes at your local marine store. They have lids on them and everything.
