What leads you to believe the overheat is something as significant as a blown head gasket or warped head? As previously suggested, it could be an impeller, manifold, circ pump, tstat, etc. I guess the first thing I would look at would be the engine oil. If its milky you know you've got issues.
In regards to investing too much in the project, unless you intend to flip it, which it doesn't sound like you are, the only person who can determine what is or is not worth it is you. How many of us haven't spent more on our boats than they're worth??? If the numbers work for you and you think you will be happier with this boat than your current boat, why not?
