AD31P Overheating

My AD31P was running at about 90 degrees.

I had the boat out of the water for a month to have the drive and engine serviced. Also had the heat exchanger cover cleaned and refitted as it had a small leak.

When I launched the boat a few weeks ago it overheated as soon as the engine was put under load.
The engineers thought it was a thermostat problem or air in the system. But this hasn’t resolved the issue.
I don’t want them to waste too much of their time if anybody has had a similar problem?
Any help appreciated.
Can these engines be run for long periods with the thermostats removed?

Thanks, impeller housing and exhaust elbow are cool to the touch.
Water comes in through the drive, could it be a squashed hose or something in that?
Raw water pump wasn’t serviced.
