Great, that 70 HP, 18' trihull combo was really popular... my first boat... still have that 70 hp chrysler on my current boat. I would definitely core sample the transom. esp. if you want a nice lil kicker on that fancy bracket
I'm a tin guy but from what I understand you'd use either thickened resin (referred to as peanut butter or PB on here) or PL Premium Contruction adhesive which is sold near the Liquid Nails in the home centers.

Stringers
Deck/Sole - You don't have to use the last layer of CSM. If you don't your deck will have a little texture to it if you are going to paint it. If Carpeting, I'd put down the CSM for a smoother surface.

was grinding some of the floor didnt want to use a pry bar afraid id punch through the hull so much for that...
yup ground through the hull......grrrrrrrrrrrrrrrrrrrrrr
Your the first person, that I have ever heard of that cut through the hull during a restore. "NOT"
I actually did it twice, once above the water and one below, Like wood said not hard to fix.
