While towing a fellow boater to the boat ramp we drug our lower unit through a mud/sand bar. Ever since then the boat will go into a continuous beep when it reaches ~2800 RPMs. The boat will also start powering down when the beeping occurs. Once you throttle down the beep will go away and it runs fine. Oil levels are good and the temp gauge reads normal.
Is it possible we have mud messing with a lower unit sensor? I hate paying to have things worked on if I know what to fix myself.

Welcome to iBoats . . .

Lower unit sensor  . . . that's a new one for me.

Got an owner's manual for the engine? Odds are that the water flow is restricted from the mud drug and there is a water pressure sensor sounding the alarm. What engine and outdrive is in the boat?

You'll probably need to check the cooling water intake line for debris that got sucked in when you bottomed out.
