1989 wellcraft fiberglassing transom

I have a 1989 well craft I/o and replacing transom and stringers. What is the correct way to overlap the tanning thinner piece first and next layer wider. Found different sites with different options. Also when I put my stringers in for the engine mount is there a way to measure how high they have to go to mount the engine so I can have it aligned correctly

I like laying the thinner piece of tabbing first. I have seen people argue it the other way, though.

I have seen someone use a jig for setting the engine height relative to the keyhole, but it looked custom.
