For your consoles, look at Archbuilder's thread on Project Fuggly. He's done a lot of custom fiberglass work that has turned out amazing. You could do the same to make custom consoles to fit your boat.
As for the gauges, do a search on iboats or some googling to turn up something that may strike your fancy. There are plenty of gauge sets our there. Another option, depending on what exactly is wrong with the gauge is to send it in for repairs. There may/should be markings on the back as to the manufacturer of the gauge. I know my Four Winns gauges were made by Faria and for a nominal fee they would take them in and recondition. I didn't get around to it as, well...that boat isn't my problem any longer.
