I spent the next few weeks grinding and in that time I decided I wanted the chines filled. I thought it would add the rigidity and strength I was looking for. I made a batch of epoxy, added 1/2 and 1/4 cut strand fiber to about 50/50 glass to resin, then added as much fairing compound until it was paste. It took about a gallon of epoxy just to do the back half of the boat.

After I ground the filler down and smoothed it out enough to my liking I then added 2 layers of light cloth, 1 layer 3/4 CSM, and then 1 layer of 6 oz cloth. Feels nice and solid under foot now even after sanding it all down in preparation of seat installation and paint :)
