‘91 merc 60hp overheating alarm buzzing

Gee, a compression test and a leakdown test will tell condition of the piston and rings. Usually, they are the first to be damaged. If they check out, it is likely the rest of the engine is fine.

    hub dust cap

On trailers with brakes, heat from them can cause pressure inside the dust covers. Of course, if no brakes, the bearings can be fully pumped up with grease.

    hub dust cap

Rich, Running those hubs will work fine, as will the solid dust caps the OP had. However, I think the OP wanted hubs that would continuously grease the bearings. In that case it seems like he needs a bearing buddy-style dust cap.

    hub dust cap

Gee, It doesn't look like it. If the bearing assembly doesn't have a grease fitting, and the axle doesn't have one, you will want a Bearing Buddy type dust cap. The Bearing Buddy type dust caps have a spring loaded center with a grease fitting. The theory is that you pump them full of grease...

How about # 31 on this diagram? They look to be avail. https://www.crowleymarine.com/mercury/oem-parts/outboard/1992/1150453md/reed-block-and-cylinder-head

    hub dust cap

The dust caps with the rubber inserts are also for the type of bearings that have zercs on them. In this case you pull the rubber cap and stick the grease gun onto the zerc, pump 'em up and then replace the rubber insert.

    My block is drained, right?

I generally use straight antifreeze, on the theory that it is diluted by whatever water is in the block. Of course, straight antifreeze is still plenty cold resistant for our winters in NJ.

    My block is drained, right?

So that was a no to dumping some antifreeze into the block to see it emerge? That would sure help me to think the block is drained.

    Johnson Evinrude 130hp vro pump

Make sure you do not have any air leaks into the gasoline lines. If air leaks, from say, the main strainer, the VRO pump will pump more oil to compensate. I would hook up a gallon of gasoline directly to the fuel line that feeds the VRO pump as close to the pump as possible, and retest.

    My block is drained, right?

Crap, dump some full-strength antifreeze into the block and manifold hoses and watch for it to emerge from the drains. It will push out any residual water.

    cold weather break in

When I had my MerCruiser, I wired a 40W heating pan under the oil pan. When temps were cold, I would plug the heating pad in several hours before use, to warm the oil. 40W was not enough to do anything but warm up the oil and help keep the manifolds from freezing.

    Fuel starvation conundrum

Lou, You might remove the antisiphon valve and replace it with a straight pipe for a test. Sometimes that can cause just a bit too much restriction. I cannot run an A-S valve on my 150HP Johnny OB. At high RPM she starves of fuel. I tried replacing it, but no dice.

    Fuel starvation conundrum

OK, another SWAG. My '88 SeaRay had a filter in the fuel pickup tube. You needed to unscrew a plain tube of aluminum to get to it. When it partially clogged, the motor only got enough fuel for low to medium speed.

Both Ethylene Glycol and Propylene Glycol are alcohols, as are all glycols.

    Fuel starvation conundrum

Did you hook up the remote tank to the water separator? The water separator is clean and sans water? Does the fuel pump have one of those porous stones on it? Does the carb also have a paper filter on the fuel inlet? My '88 MerCruiser 4.3LX did. They last a long time, but not forever.
