I have a fiberglass hull that I want to finish off with wood (front deck, seats, wind shield, etc...) I'm using Mahogany as my finish wood but, I was wondering if anyone had any sugestions about what wood to use for non-visible sub structure.

How about pressure treated pine? Dry it out and coat it with poly resin or spar urethane. I recommend you do some research on spar urethane, if you are not well-read. For a long time spar varnish was superior to spar urethane for Uv and weather protection. I think that has now changed.

As my avatar name reflects, this is what I want to do someday as well. Spruce, Douglas Fir and White Oak are all acceptable woods to use for boats. It it's not gunna show then you can also use Ext. Grade Plywood. It uses 100% waterproof glue and when coated with epoxy will last for decades. Post some pics. Would LOVE to follow this project.
