whats the worst that could happen if you used a long sharft on a boat that should have a short shaft?

You will have tons of spray coming up, it will limit your speed quite a bit, and obviously it'll act as a depth gauge, you'll nail the OB before anything else!

nothing really ..... it will spray alot of water into the boat .....

lack of speed and performance. install a jack plate and get the motor to the correct height.

You will have a longer fulcrum which will tend to add to the bow rise.
