what to use for wood seats refinish?

I have a 1989 Lund with wood seats. The surface is solid and unblemished, but the edges clearly show the construction to be of some sort of plywood. There is no delamination yet, but the edges need to be sealed to prevent water from penetrating.
What have others had success with for good appearance as well as durability? The boat will likely have a cover when not in use, but will not be in a garage. It may be uncovered and open to the elements about 2 weeks at a time, but not very often.

west system then varnish or paint.

Ayuh,........

I like xtraham's Idea,........

Epoxy,+ Then Whatever you Want to cover it with.......
But,.... Epoxy Does Have to be Covered......

If you use varnish make sure you are using marine spar varnish.

The seats are currently woodgrain finish. I would call it clear, which is what I would like to maintain.
Not familiar with West System epoxy. That goes on over what is there now, then varnish over the epoxy? My experience with varnish is that it needs very regular recoating, or has technology of coatings come a long way in 10 years? What about something like polyurethane?

Lowes carries Valspar it has been around since the dark ages, it is what all the old beautiful wooden boats were finished with.
