The DLX series is appealing, do they have decent speed with the lower HP outboards?

yes--because they are flat and light they need fewer horses. My hunt club has a 19 with a 50 we use as a work boat as well as fishing.

How do they fair in the wind compared to an aluminum?

Ok did another measurement tonight. Assuming the new boat would have an approximate 7' beam, there is 23'6" going diagonally. That's including a sufficient corner space for the outboard which leaves just over 21' from transom to hitch. Now assuming there is (or can be added) a swing tongue, I think there may be possibilities in the 17-18 range and should have no problems on the bay with that size.

Also I have been looking at the Carolina skiffs more and I like that they are very customizable. Seems like I can get a good base deal and then still have budget left to add accessories. I am also looking at pathfinders, key wests, sea fox, and mako.

Path finders are good. Key west and sea fox, no complaints. New mako's, not so good; old ones are good.

There are some others similar to C Skiff--bay runner, skimmer, etc. Also palm beach and scout for light roomy boats. C-skiffs can be bought bare boat and set up how you want. Just be sure to get the bow deck.
