To get the Gev VII motor to run on a carb.

Get aftermarket intake. (Dart, World Products, etc.). Send out to get the intake epoxy lined or put a heat exchanger on the motor. Pull oil pump drive. Install SBC/BBC distributor. Slap on a 850cfm carb. Set base timing to 12BTDC. Go boating

If you want to make a lot more power, swap the cam as well

do all the factory gauges run through the ecm ? And then run a low pressure electric fuel pump?

Gauges can be either analog (direct to sensor) or digital via NMEA

If you do some digging. The Holley HP ECUs and even the LSx ECUs can be made to run the EFI in the 8.1.
