Under seat storage

I would like to build some storage under my bow riders front seats. Other than wood, what is a good product (affordable) to use? Looking for something that comes in a sheet (maybe 1/2” thick), that is easy to cut & scew together, but will stand up over time (like with the anchor bouncing around on it).

Unless you have the money to do something like Coosa board, plywood with a layer of CSM over it is about as durable, cheap, and easy as it comes.
