If you, battery, anchor, fuel tank are all in the middle I dont see any problem !! The only tracking issue would be if something was throwing the weight to one side or the other. Keep that 3 hp motor in the center andvyou should be good to go....you might need to make some minor adjustments to weight location ( battery further forward etc) to get things trimmed out. A light weight alum 12 footer is so light, they dont track very straight anyway, the slightest wind or just slightly leaning to one side or another will change course. Did it for many years with a 10' jon boat and an electric motor. Once set straight, I could just lean a little to the side to steer it !!
