My boat weights about 1K less dry then yours and I use a 3/4 with class 5 hitch. No issues

Just going back and forth to the local ramp, or long haul serious towing ??? If within towing specs, a 3/4 T should be fine for part time towing, but if long haul serious over the road towing, that will be hard on your 3/4 T truck..

Very few 3/4 ton trucks with 15k towing capacity.

The TV ads make all kinds of claims about their pick up's being able to tow 12k to 15k lbs capacity and up. If they say it on TV it must be true !!!

Rated max tow capacity and total weight that is comfortable to tow are two different things. I’ve found that I generally try not the exceed 2/3 to maybe 3/4 of the max tow capacity (Loaded weight). I’ve found that when I exceed that driving and handling is a hassle, is tiring more anxiety causing especially on multi-hour drives. General handling diminishes, you need longer stopping/braking distances , tougher going up grades and mountainous roads, coming down ain’t any fun either and the list goes on. Not saying you can’t or shouldn’t tow at max capacity , just saying at the end of a long drive you’ll feel much more relaxed and rested towing 2/3 to 3/4 capacity or less.
Also if I’m towing 15000 lbs or more I prefer a diesel and a dually.
Finally when towing heavy go for more rather than less. A 1 ton would be best but a 3/4 ton with sufficient tow capacity will do just fine in your case.

It sounds like you have the 320EX (express cruiser), not the center console version?

Assuming the EX . . . If you are doing a lot of highway towing, I'd be in an F-250 (or 350) Dually. If not then a regular 250/350. You would probably want the Total Gross weight rating to be just under the CDL limit (maybe spec'd around 22-23,000 lbs)

I do local towing only at about 14,000 lbs towing weight with an F-150.

Of course as I drove past the town launch ramp this morning there was an F-350 taking out a 16 foot skiff . . .

The definition of overkill :ROFLMAO:
