The only oil I use in the house is extra virgin olive oil.For all my cooking and salads, I baste trout and salmon in olive oil,olive oil even to fry an egg.Only thing is, I never understood that thing with the extra virgin.What's that all about?

As IOOC standards are complex, the labels in stores (except in the U.S.) clearly show an oil's grade:

Extra-virgin olive oil comes from cold pressing of the olives, contains no more than 0.8% acidity, and is judged to have a superior taste. There can be no refined oil in extra-virgin olive oil.

Virgin olive oil has an acidity less than 2%, and judged to have a good taste. There can be no refined oil in virgin olive oil.

Pure olive oil. Oils labeled as Pure olive oil or Olive oil are usually a blend of refined olive oil and one of the above two categories of virgin olive oil.

Olive oil is a blend of virgin oil and refined oil, containing no more than 1.5% acidity. It commonly lacks a strong flavor.

Olive-pomace oil is a blend of refined pomace olive oil and possibly some virgin oil. It is fit for consumption, but it may not be called olive oil. Olive-pomace oil is rarely found in a grocery store; it is often used for certain kinds of cooking in restaurants.

Lampante oil is olive oil not used for consumption; lampante comes from olive oil's ancient use as fuel in oil-burning lamps. Lampante oil is mostly used in the industrial market.


As a side not..... we only flavor in olive oil and cook with regular oil..... the cooking transfers no flavor and a chef told me not to waste the money by cooking with oilive oil.

Extra virgin olive oil, some pita bread and a bit of feta, that's my breakfast most mornings;)

Most mediterranean countries claim to produce the best olive oil, actually the best olive oil that i've ever had was given to me by a friend from the West Bank in Israel/Palestine, some little village near Ramallah, apparently their family and many of the people around there have been producing their own olive oil for centuries the old fashion way, no mechanical machines involved i was told.

Like wool , it comes from especially ugly olives .. :p

I think I know exactly where that olive press is situated.I have been there often when it was safe to travel.That press is about 400 years old.
Their oil is pressed with a huge upright standing rolling mill stone.
They do not pasteurize or even heat up their olives before they press.
Ah, to sit there again dipping a piece of pita in hummus and fresh olive oil while drinking some turkish coffee.

Gotta agree ... best olive oil I had I purchased in Ghana and it was made in Israel. Next comes the Italy Olive Oil. My great grandma worked as an olive picker to earn enough money to support the family while great grandpa worked in hosery mill in Hamburg, PA to earn enough money to bring the whole family over.

Yes, this family enjoys it's extra virgin olive oil, but not all extra-virgins are created equal!

Can't say that I've tried that, but it can't be as good as sopping a biscuit in red-eye gravy while drinking a cup of Maxwell House coffee. :D
