Tabbing and wrapping the stringers?

still tearing out the old stringers and grinding on the Chawk 18 in preparation for the new plywood stringers.
How many layers of tabbing should I do, and what weight cloth? The keel stringer will be 13” tall and the outside ones will be 8”.
I’ll be using polyester
