T top question - half fiberglass storage - half canvas

I have been trying to think of ways to create more storage while designing my tower on 99 Sea Ray 180. It is going to be similar to this guy's tower. Going to use EMT as well, either 1 1/2 or 2", but that will be another thread once i figure out how heavy my T-Top will be.

Anyways, attaching a ROUGH design for the T-top, basically the front half will be canvas top, held to the EMT welded frame with rope. But in the back I want to create a fiberglass box that I can store Life jackets, line, clothes, etc (light stuff) to keep it out of the way. Planning on leaving a vent in the back so moisture won't get trapped in.

Is this something that I could create a wood frame, fiberglass the frame and then remove the wood from inside once it's setup so I can save on weight? will that be possible if I do put some supports in, or should I leave the plywood form in permanently.

Main reason I want to decide on this before I finish designs on tower is this might affect how tall the tower will end up.

Or is this a bad idea? please tell me why if it is!

Also, how tall is too tall for a tower? is there a "standard"?

As to the height, I would imagine there's a "calculator" that factors in the size of your boat, etc. because otherwise at some point I'd think the boat would be "tippy"
