looking to swap out my compass in my 08 q5 for a water temp sensor dont really need a compass on my lake but would like to know how cold the water is before i get wet any one done this

You should check with your local regulatory agency (Coast Guard or Fish and Game) if it is required by law before removing. In California, I believe it's recommended but not required.
Below the compass where the Tahoe emblem is, there is where the depth finder /water temp combo can be mounted. No need to discard the compass.Just use the proper size hole saw.
