strange motor behaivor

Hello everybody I have an 85 evinrude 70 hp. Motor consists of 3 cylinders and is a 2 stroke. I have a weird problem. My wife and I have taken our newly purchased boat out for a test run on the lake (saltwater) and both times we have been stranded multiple times per outing. The boat will start and idle just perfect at the house and will fire right up usually when launching. Now the first time out we launched with no problems and cruised around the lake for about 10 minutes until we found a good fishing spot. upon trying to leave the boat would not start.
Now I am very unfarmilliar with boat motors so like the genius that i am I started fiddling around with a little red switch on the side of the unit until it started back up but when I would put it in forward the motor would just bog down and die. when I started the motor again she instantly fired up and went straight to WOT! The boat was still in neutral so I just shut the motor off. I adjusted the 2 cables on the side of the unit (once again not knowing what I was doing) and the motor started up but this time was instantly in gear at a slow idle and we were headed back to the boat launch..
I have a lot of questions being new to boats but I am pretty sure that I have some sort of fuel problem and im not too sure what the cables did but I should probably get them back to where they need to be and find out what they do when adjusted. If anybody has any input on this it would be greatly appreciated.

Being a new boater, I would find an exsperienced boater, and get some pointers. Those cables must be put back in proper order. An owners manual would help also. Don't get yourself hurt in the mean time.

well upon further inspection Ive discovered that the small vent cap on the portable gas tank i have been using was screwed in tight, so maybe thats why she was bogging down. I think me playing with the cables out on the water might have been causing erratic idle and movement in neutral. I guess I should judt keep my hands off of the motor untill i learn a bit more about them..

Yeah gotta have that vent open when running the motor otherwise the fuel wont flow after a short while ;)
