I love turkey and we have it on Thanksgiving and New Year's day every year but I've ALWAYS read you defrost the turkey either in the fridge or in cold water (13 pounds would not have taken long); never about thawing at room temperature....I'll like to see if you suffer no ill affects............

Don't forget the cranberry-horseradish sauce ... Just mix some fresh, chopped cranberries and a little bit of orange pulp into horseradish sauce ... Adjust quantities to taste. Give a nice flavor of crackers, or eaten with the turkey. Yum!

got a good thermometer here, yup at 165!!Cook the turkey until the breast reach 165˚, let it sit for a while before carving. If you have a good accurate thermometer it helps..the pop up button is hit or miss for me?!
Get a Thermapen (best, fastest read thermometer made). I love mine!
