Restoring 1966 larson 14ft

Hello,

This is my first time on here and also my first boat restoration. I bought a 1966 larson all American 14ft about a year ago and have started to restore it. I have everything stripped out down to the floor which has to be replaced. It has breaks and seems to have all rotten wood. So here are my questions: 1) it has a fiberglass coat over the plywood what is the best and easiest method of removing the floor. 2) should I take everything out or just where it is broken and rotted. 3) what is a good way to bring color back in fiberglass. 4) it had the old cord steering is there a better option. I want to do this right so it lasts and keeps the classic feel it had. It has a 35 hp johnson motor and I'm switching trailers. I would also appreciate any other advice I'm very new to this.
